Made from cow's milk. It is extremely mild, nutty and sweet, and when ripe it acquires a slightly more spicy aroma and moderately sour taste. It is also characterized by a very low percentage of fat. It is cut into thin slices and served with crackers or bread as the main ingredient of a traditional breakfast. It is also used in the preparation of various sandwiches and salads and, as an ingredient in hot sauces, compotes, baked and au gratin dishes. Edamer goes well with fruit and is most often served with melons, peaches and apricots, and more mature with pears and apples.
