Škripavac cheese is an indigenous Croatian soft full-fat cow's milk cheese made from pasteurized milk with traditional ingredients such as dairy culture, rennet and salt. Škripavac is characterized by a smooth, slightly elastic texture that slightly "crunches" under the teeth — hence its name. It has a mild, milky taste that goes well with a variety of foods. It can be eaten on its own, on sandwiches, with bread with tomato and olive oil, or as an addition to salads and light dishes, and even in combination with fruit.
